This limited-edition experience is too amazing to miss! Catch at St. Regis has launched an exclusive Zero Loop Journey, a four-course set menu paired with non-alcoholic and sustainable mixed drinks that’s all about the greener side of life.

While farm-to-table restaurants continue to put sustainability at the centre of fine dining, more dining establishments across Abu Dhabi are embracing zero-waste kitchens and similar initiatives.

Available until 28 September 2025, the menu is built entirely on a zero-waste philosophy, where every ingredient is used to its fullest. From skins and stems to cores and pulps, it’s magical to watch how everything transforms into a truly unique plate on the table.

The Zero Loop Journey menu

With no ingredient overlooked and nothing wasted, the journey is both a culinary and creative masterpiece.

The experience begins with Ocean Zero, a delicate harmony of crab lump, jalapeños, and avocado, where the fruit is reimagined in full. For instance, the shell is used as a bowl, the flesh prepared as a creamy purée and marinade, and the seed pressed into oil for added depth.

Next up is Tide to Tail, where Scottish salmon is paired with leftover sushi rice shaped into a crisp cake, its skin turned into a crunchy garnish, and radish peel is used for an extra layer of texture. This one’s definitely a personal favourite for us!

For the main course, Sea & Roots showcases local Koffer fish alongside celeriac prepared in six ways, from purée and roasted root to pickled, remoulade, chips, and even celery salt, all brought together with a light jus made from the fish bones.

Lastly, The Rind & Vine offers a refreshing and sweet finale of watermelon and tomato, with the rind candied, the tomato skin crystallised, and the ingredients further elevated through consommé, espuma, and powder, ensuring nothing is left behind.

Each course is paired with a bespoke mocktail for an enhanced, holistic experience. Bloom Zero brightens the opening dish with jasmine tea, green apple juice, falernum, and lemongrass soda, while Sip to Shore layers nori tincture, cucumber juice, rice syrup, and a touch of saline for a taste of the sea.

Red Loop refreshes with cucumber and pomegranate juice, syrup, and lime, and Stem to Sip reimagines kitchen trimmings with dill stem syrup, clarified tomato water, green apple, and lemon juice.
